Stuffed Rainbow Trout

MAKES 2 SERVINGS 

This tasty rainbow trout dish is rich in cardio-protective omega fats. What’s more, the pumpkin butter stuffing is naturally packed with antioxidant vitamin E, cholesterol-lowering phytosterols and garlic, to provide a heart-healthy dinner with a zing!

Ingredients

2 whole, prepared rainbow trout

Stuffing ingredients:

  • 2 handfuls of fresh basil leaves, finely chopped
  • 1⁄2 pickled lemon, deseeded and finely chopped
  • 2 cloves of garlic, crushed
  • 50g Omega Excellence Organic Pumpkin Seed Butter

 

Method

  1. Preheat the oven to 200°C.
  2. Lightly grease a baking dish large enough to hold the fish.
  3. Blend the stuffing ingredients together, using using the back of a spoon.
  4. Cut 3 diagonal slits in the side of each fish and place some of the stuffing mixture into each slit.
  5. Place the remaining stuffing inside the cavity of the fish.
  6. Bake the fish in the preheat oven, uncovered, for 25 minutes.
  7. Serve whole with a large mixed salad or with fresh, steamed vegetables.
