Recipes - Low Fat Eggnog

Ingredients

  • 3 cups skimmed milk. Almond and coconut milk are good, dairy-free alternatives
  • 1 vanilla pod
  • 2 large eggs
  • 1/3 cup ZyloSweet
  • 1tsp cornflour
  • Freshly grated nutmeg
  • Optional rum or amaretto

Method

  1. Add 2½ cups of milk to a saucepan. Split the vanilla pod lengthwise and scrape out the seeds. Add these and the empty pod to the saucepan and simmer over medium heat.
  2. In a large bowl, whisk together the eggs, ZyloSweet and cornflour.
  3. Temper the eggs by gradually pouring the hot milk mixture, about 1 cup at a time, into the egg mixture, whisking constantly to make sure the eggs don’t scramble.
  4. Pour the mixture back into the pan. Place over medium heat and stir constantly until it begins to thicken – about 6 or 7 minutes.
  5. Remove from the heat and immediately stir in the remaining ½ cup of milk to stop the cooking. Remove the vanilla pod, let the mixture cool, then transfer to a jug and chill until ready to serve.
  6. If required, add a small amount of rum or amaretto, to taste. Garnish with grated nutmeg.
