Recipes - Broccoli & Goats' Cheese Souffle

  • 1 medium head of broccoli, broken into small florets
  • 1tbsp Omega Excellence Organic Coconut Butter
  • 1tbsp extra virgin olive oil
  • 2tbsp plain flour
  • 300ml low-fat milk
  • 1tsp Dijon mustard
  • 1/4 tsp dried rosemary
  • 1/4 tsp salt
  • 100g soft goat’s cheese, broken into small chunks
  • 3 large eggs yolks
  • 5 large egg whites
  • 1/4 tsp cream of tartar


  1. Preheat oven to 190°C.
  2. Coat four 10oz ramekins with a little olive oil and place them on a baking sheet.
  3. Add the broccoli to a pan of boiling water and cook for four minutes.
  4. Put to one side.
  5. Melt the butter and oil in a large saucepan. Mix in the flour and cook for
  6. 1 minute, whisking constantly. Add the milk, mustard, rosemary and salt and continue to whisk over the heat for 2-3 minutes, until thickened.
  7. Remove from the heat and whisk in goat’s cheese and 3 egg yolks until well combined. Transfer to a large bowl.
  8. In a separate bowl, beat the 5 egg whites until soft peaks form. Add the cream of tartar and continue beating until stiff peaks form. Using a rubber spatula, gently fold half of the whites into the milk mixture. Gently fold in the broccoli  then the remaining egg whites until no white streaks remain.
  9. Transfer to the prepared ramekins.
  10. Bake for about 20 minutes, or until puffed and firm to the touch.
  11. Serve immediately.
